Honey Peanut Brittle

Ingredients
- 1 cup African Bronze Honey (Use our Honeydew Forest Honey if you want dark treacly brittle, or our Miombo Blossom Honey for a lighter more caramelly taste.)
- 1/4 cup peanut butter (or almond butter)
- 2 TBSP butter or coconut butter
- 1 cup toasted peanuts (or slivered almonds)
- 1 tsp vanilla
- 1 tsp baking soda
- 1/2 tsp salt
Method
- Pour the honey into a medium saucepan and place over medium-low heat.
- Cook for 16-18 minutes or until it reaches 315ºF degrees on a candy thermometer. This is the upper end of the Hard Crack stage, before it becomes Light Caramel Stage.
- Turn off the stove and add the Peanut or Almond butter, butter or ghee, peanuts or almonds, vanilla, salt and cayenne.
- Add baking soda and stir.
- Pour mixture onto a baking sheet lined with parchment paper, it should self-level and settle evenly.
- Sprinkle with sea salt.
- If you're a chocolate lover, drizzle melted chocolate over the brittle.
- Cool in the refrigerator until hardened – if you live where we do, during the winter you can use the natural freezer we call outside!
- Break into large pieces.
- Store in a sealed container in the refrigerator.
