The natural sweetness of dates and pears, balanced with the tartness of cranberries, gives this fruit cake all the cozy, festive feels. Ingredients:
- 2 cups flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ cup Cacao & Honey
- ¼ cup butter
- ¼ cup olive oil
- 4 eggs
- 1 cup diced dates
- 1 cup diced pear
- 1 cup chopped cranberries
Directions:
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine flour, baking powder, and baking soda.
- In a separate bowl, whisk together the Cacao & Honey, butter, and olive oil until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Fold in the dried fruits and stir until evenly incorporated.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick comes out clean.
- Let the loaf cool before slicing and serving.
