Fruit Cake Loaf

Let’s be clear—this isn’t your grandma’s dense, retro fruit cake. We’re giving it a modern twist by calling it a loaf, and trust us, it’s something you’ll actually want to eat. The natural sweetness of dates and pears, balanced with the tartness of cranberries, gives this fruit cake all the cozy, festive feels. A touch of honey adds just the right amount of sweetness, making it versatile enough to enjoy with butter, cheese, or a little extra drizzle of honey.

Whether you’re serving it as a holiday treat, gifting it to someone special, or enjoying it as a make-ahead snack, this loaf is sure to become a seasonal favourite.

Ingredients:

    • 2 cups flour
    • 1 tsp baking powder
    • ½ tsp baking soda
    • ½ cup Cacao & Honey
    • ¼ cup butter
    • ¼ cup olive oil
    • 4 eggs
    • 1 cup diced dates
    • 1 cup diced pear
    • 1 cup chopped cranberries

Directions:

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine flour, baking powder, and baking soda.
  3. In a separate bowl, whisk together the Cacao & Honey, butter, and olive oil until smooth.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Fold in the dried fruits and stir until evenly incorporated.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick comes out clean.
  8. Let the loaf cool before slicing and serving.

Enjoy with a little butter, cheese, or extra honey for the perfect holiday snack!
