We love honey and we love dark chocolate, so when I saw Sheri McDonald's recipe for sugar-free chocolate (made with honey) on her kidsumers.ca blog I had to make some for my favourite people for Valentine's Day. These literally take ten minutes to make. So easy. I think they taste even better after maturing in the fridge for a few days – if you can keep them safe from the snackers or chocolate lovers in your house.
Ingredients
3/4 cup cocoa powder
1/2 cup coconut oil, melted
2 & 1/2 tbsp African Bronze Honey
Whole almonds, coconut, sea salt are optional additions.
Method
1. Mix everything together until smooth.
2. Pour mixture onto parchment paper on a cookie sheet, or into heart molds or baking cups. The heart molds I used take about a teaspoon of the chocolate mixture, but I used about a tablespoon for the baking cups.
3. Place in freezer until hardened (approximately half an hour). Or, if you live in Canada you can just place them outside (especially in February).
4. Keep refrigerated in a tin or covered container until ready to serve. Because they are made with coconut oil they will stays solid even at room temperature.
With Valentine's Day just a few days away you have just enough time. You could make them with regular honey, but they'll taste better with African Bronze!
